1. Prepare the Strawberries
First wash the strawberries thoroughly, hull them, and roughly chop them.
In a large saucepan, combine the chopped strawberries, 140 grams of caster sugar, and juice of half a lemon. Stir well to coat the fruit with the sugar. Let it sit for about 10-15 minutes to release the juices from the strawberries.
2. Cook the Strawberries
Place the saucepan over medium heat and bring the mixture to a simmer. Stir occasionally to help the strawberries break down. After about 10 minutes, you’ll notice the mixture thickening and becoming syrupy.
3. Blending the Jam (optional)
For smoother consistency, blend the jam either with an immersion blender or a regular blender. Allow the jam to cool for a few minutes to avoid possible burns. Blend until the desired consistency is achieved.
4. Add the Chia Seeds
Once the jam has thickened to your liking, stir in the chia seeds. Let the mixture simmer for another 5-7 minutes, stirring occasionally to prevent burning. The chia seeds will absorb some of the liquid and help thicken the jam further.
5. Test the Consistency
To check the consistency, place a spoonful of jam on a chilled plate. Allow it to cool for a minute, then run your finger through it. If it wrinkles and doesn’t run, it’s ready.
6. Jar the Jam
Once the jam has thickened to your preference, remove it from the heat. Let it cool for 10 minutes, then transfer it to a clean jar or container. Let the strawberry jam fully cool before sealing and storing in the refrigerator.
